Cranberry Sauce with Walnuts
This recipe serves 6 and takes about 15 minutes to prepare.
Ingredients:
- 2 cups cranberries
- 1/2 cup apple juice
- 1/4 cup orange juice
- 1/2 cup sugar
- 1 teaspoon grated orange rind
- 1/2 cup walnuts, chopped
- A few large pieces of walnut for garnish (optional)
Instructions:
- Combine apple juice, orange juice, and sugar.
- Stir until sugar begins to dissolve.
- Add cranberries.
- Simmer until cranberries pop (about 5 minutes).
- Remove from heat and stir in rind and chopped walnuts.
- Cool to room temperature and then chill.
- Garnish with walnut pieces if desired.
Blueberry Salad
This recipe serves 12, great for children!
Ingredients:
- 2 small packages blackberry jello
- 2 cups boiling water
- 1 15-oz. can blueberries, drained
- 1 8 1/4-oz. can crushed pineapple, drained
- 1 8-oz package cream cheese
- 1/2 cup sugar
- 1/2 pint sour cream
- 1/2 tsp. vanilla
- 1/2 cup chopped pecans
Instructions:
Dissolve jello in boiling water. Drain blueberries and pineapple; measure
liquid. Add enough water to make 1 cup; add to jello. Stir in blueberries
and pineapple. Pour in 2 quart flat pan and refrigerate until set. Combine
sugar, sour cream, cream cheese, and vanilla. Spread over jello layer;
sprinkle pecans on top. Very sweet and rich, may also be used as a
dessert.
Mushroom Rice
This recipe serves 6-8 and takes about 30 minutes (plus 1 hour bake time) to prepare.
Ingredients:
- 2 1/2 cups raw rice
- 5 cups water
- 1 onion, chopped
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 cloves garlic, chopped
- 1/2 cup celery, diced
- 4 cups mushrooms, sliced
- 1/4 cup vegetable oil
- 1 tablespoon sage
- 2 teaspoons thyme
- 2 teaspoons parsley
- salt and black pepper
Instructions:
- While heating oven to 350 F, saute a few minutes:
- onion, bell pepper, garlic, and celery.
- Add mushrooms, sage, thyme, parsley, and salt and pepper.
- Saute a few minutes more.
- Add water.
- Stir well and bring to a boil.
- Add rice.
- Stir well.
- Cover and carefully transfer to oven.
- Bake at 350 F for 1 hour (or until rice is done).
- Do not stir or uncover while cooking.
- Fluff rice.
Crunchy Almond-Caramel Brittle
This recipe takes about 10 minutes to make.
Ingredients:
- 1 cup sugar
- 1 cup brown sugar-molasses
- 1 tsp. vanilla
- 2 cups almond chips
Instructions:
Add 1 cup of sugar to pan, heat, stir constantly
Add 1 cup of molasses and cook until sugar is dissolved, mixture bubbles
Add 1 tsp. of vanilla, sugar starts to smell like caramel (about 5 minutes)
Add 2 cups of almond chips added to the hot mixture and stir for another
minute (don't overcook, take instantly off the heat when almonds smell finely
roasted, or else it might start to smell burnt).
Spread mixture quickly on a well greased baking sheet and roll with
greased (!!) rolling pin about 5 mm thick. Let cool, break into pieces.
If you want squares, cut while mixture is still warm and soft.
Careful: Melted sugar is exceedingly hot! Don't lick or stick fingers in
it while cooking or removing from pan - you'll end up having blisters!
And do use regular Brown Sugar-Molasses, not the ones that taste like
licorice.
Wrapped in a nice box, these candies also make a wonderful gift!
Mademoiselle Inge's Pineapple Salsa
Ingredients:
- 3-4 cups pineapple (cans are ok dokay)
- 1 cup onion
- 2 tablespoons lemon juice
- 1 jalapeno
- 2 tablespoons ginger
- 1 bunch cilantro
Instructions:
Mix in a blender and adjust to taste
It's a super double delicous suprise in your mouth
especially yummy with black bean jalapeno chips
Holiday Mint Cookies
This recipe serves 12 and takes about 30 minutes (excluding chill and bake time) to prepare.
Ingredients:
- 1 cup margarine
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 1/2 teaspoons mint extract
- 2 1/4 tablespoons crushed dried mint leaves
- 2 cups flour
- extra sugar for coating
Instructions:
- Mix margarine and sugar thoroughly.
- Add salt, mint extract, mint leaves, and flour.
- Mix thoroughly.
- Chill dough for at least 1 hour.
- When ready to bake, preheat oven to 350 F.
- Form the dough into 1-inch balls and roll them in sugar.
- Press ball with your thumb.
- Place on ungreased baking sheets and bake 12 to 15 minutes.
- Cool on racks.
- Makes about 3 dozen lovely, green-specked cookies.
